Our cuisine is a fusion between Ecuadorian and international food, born 70 years ago in wood-fired kitchens. Its evolution, led by the best chefs in Ecuador, and now directed by the Imbaburan chef Román Montalvo, rescues our traditions, elevating them with new techniques to reinterpret the flavors of our land.

Hacienda Cusin’s recipes chronicle the story of Ecuador. Its flavors transport you to the past, to the home of the great-great-grandmother who cooked in a stone-oven, and the freshness of its local and organic ingredients is unmistakable. The vast majority of our kitchen's production comes from our greatest pride, the hacienda's orchard. Anything that doesn’t come from the orchard is sourced from local producers and farmers.
Ecuador is famous for being the land where everything grows, big and beautiful, any time of the year. Upon this fertile land we founded Hacienda Cusin’s garden, where we grow 100% organic fruits, vegetables, and medicinal herbs to feed our kitchen every day.
Manned by our dear Luis and his pupil Geovanny, the harvest is done daily at noon for salads, soups, desserts, and drinks at the restaurant. We harvest lettuce, maggi grass, three different types of mint, onions, purple basil,
white and purple cauliflowers, tree tomatoes, chili peppers, blackberries, artichokes and countless other delicacies that call us to play in the kitchen, offering the freshest and most delicious treats of the day.
We feed the garden using organic fertilizer made on the hacienda with our own composting system, and we fight pests with agroecological techniques. Cusin’s garden is living proof that the farm was built on an Andean Eden, where fruits are abundant and never run out.
